Probably one of my favorite deals right now are the Peruvian amazon lodges. They usually include all meals, tours and transfers. Dig around for a bit and you can find some great rates. Private bungalows, pink dolphin spotting, nighttime animal treks etc.
In terms of finds, I'm not sure if this is within your budget, but Hacienda Concepcion by Inkaterra is surprisingly affordable, and a great deal less than many Eco lodges based in Iquitos and Puerto Maldonado!
