Sounds like your expectations are unrealistic. Of course DL won't have many non-stops out of O'Hare since that is not one of their hubs. But even with this condition, you can fly ORD-AMS round trip for 60K miles using KLM's non stop.
I didn't even do much checking and found ORD-DTW-AMS or ORD-MSP-AMS available in January, returning the same way, on my first search. I bet you could find the non-stop flight too. I am also sure you could find it later in the year too.
WAY easier than you are making it out to be
