When I traveled with a dog, I already had PreCheck in two instances, and in one, SFO-DEN, didn't (this was when PreCheck was still denied to domestic connections on international itins, BTW). In SFO, I used the regular lane accordingly, but was told by the screener that I should have been sent to the PreCheck lane due to having a dog (and she ultimately escorted me there).
I think it's a "YMMV" situation that depends on the checkpoint setup. You have to carry your dog through the WTMD, so they have to have a WTMD up and running; they also have to do a hand swab ETD. I don't know why that would preclude them just opening the belt in front of a WTMD at any given lane (maybe they haven't calibrated it recently enough and would have to do so when they're not using it?).

If you get PreCheck, use the PreCheck checkpoint at MCO. GE will increase the odds of PreCheck assuming you have your Trusted Traveler # in your profile, but that's about it.
