I did pretty well the same thing as you. DEN-NRT on United 787 ( E+ in a bulkhead seat) and NRT-IAD on ANA in standard Y on the way back.

Like you I was told only middle seats, but they said they would add a note to the reservation saying I preferred aisle or window. When I checked in on line 24 hours in advance, sure enough I had an aisle seat. Managed to change that to a window seat with an empty middle seat beside me, so that made for a more enjoyable trip.

I will say that the ANA economy meal was the best I have had on an economy flight (Japanese meal). You can look up their menu in advance on the ANA website.
