I agree here, it seems perfectly normal to use day old croissants for such a dish. I've never had croissant pudding though, and cannot say that it sounds very appealing...

This is completely unacceptable. Sliced fruit must be prepared fresh daily. I would be furious if served sliced fruit that had gone off.
Back on topic of the GH, I find their breakfast offerings to be awful. I often skip breakfast, but if I have breakfast while staying at the GH I order room service. I cannot stand the French Kitchen buffet or a la carte service.
