Of importance is quality of food, ambience, quantity of food (I'm guessing buffets will be suggested more often than not though) - in that order.

Bellagio just posted its Christmas menus:

The fine dining venues seem to have them limited to special events on 12/24 and/or 12/25, while the others generally have somewhat more extended timeframes.
