What gives is that Summer is peak travel time between the U.S. and Europe, so AA is not going to give away SAAver seats that it thinks it can sell for cash. You can call AA to check on availability with IB, which will not show up on aa.com. Or use UA miles for the outbound, and see if you can find award seats using AA miles for the return from Santorini (not Athens).

And I believe there is still a 50K AA miles offer out there with $3K spend.
