I've stayed in that hotel. Can't speak to the executive rooms, but the suites there are gorgeous. My gf at the time thought it was the best of all the suites we stayed at (and we traveled a lot). Perhaps you can see about upgrading to those if you've got the points to burn. Very nice lounge too. Don't specifically recall the breakfast but it's likely decent.
If you only have 1 ressie - then they'll likely require you to use points for every night. If you only want to upgrade for part of it - you'll prob need two ressies.
I have 5 separate reservations, one for each night as when I booked it way back, I did not know whether I would go to Chiang Rai or not for an overnight.
Just realized a suite won't work as it is only a king size bed. We need 2 beds.
