I don't think there is anything wrong at all with the phrase "to plate". As a uni student I worked in a number of hatted restaurants and it was regularly used and was an efficient means of communication. It is perfectly appropriate in commercial settings, and the first class lounge certainly applies. Your dislike for the term may stem from the source you learnt it from.
(Shrug) it's a wank-word that deserves a quick death. I first heard it some time ago before those stupid cooking shows came along and it made me roll my eyes then as it does now. Limit it to people who work in hatted restaurants where mere mortals don't have to hear it. And take the phrase "to reach out" back to wherever it came from while we're at it
