I am flying SMF-SFO-CDG with one of my parents (UA Silver) in November. We have a 1:20 connection between the two flights which meets the MCT rules. However the SMF-SFO UX flight has an atrocious on-time rating. Only 27% of 62 flights arrived on time with an average delay of 82 minutes according to FlightStats.com.
If we miss the 2:00PM SFO-CDG flight, there are no more United metal nonstops or connections that would get us out that day. An Air France nonstop leaves later and Swiss to Zurich and Lufthansa to Munich are options that take more time.
If we miss the connection due to operations or weather, what are the chances on getting rebooked on AF as a first choice or LX and LH as 2nd and 3rd choices?

I had an experience which may be relevant a couple of years ago, just before UA and CO merged. I was scheduled to fly DCA-EWR-STR on CO, but the DCA-EWR flight was delayed 3-4 hours so the connection would have been impossible. CO rescheduled me to fly IAD-FRA-STR, flying on UA and LH. (They also gave me a voucher for the taxi from DCA to IAD.) The agent would have put me on LH IAD-MUC-STR, a flight which left earlier, but was afraid that I might not arrived at Dulles in time.
In your case, I would expect them to want to put you on LX or LH rather than AF unless those options take a great deal of additional time.
However if you can get on AF, do it. I love their product (well, I have only flown them in,C)
