Many passengers prefer the middle column of seats in a 2-2-2 configuration because a) each seat has direct aisle access, and b) each seat has nobody else that needs to climb over you to get to the aisle. On 2-2-2 config, 33% of the seats meet both of those criteria. On 2-3-2 aircraft, 0% do. You can't get both a) and b) on a 2-3-2 config aircraft by "simple seat selection during booking process" because such seats don't exist.
