EK cabin service seems variable.

Yes, right on.
My only routes are MAN-DXB-TYO, Y or J. EK cabin service seems to be variable irrespective of status: I've mainly had good experiences as Gold in Y, and it's mainly made no difference in J. EK service can be wonderfully good in both classes, but can also sometimes be really poor, in J as well as Y. It seems to vary most with the personalities of the crew, and then with the loading. It's generally been best on empty flights and sometimes downright awful on full flights.
On the positive side, I've been very lucky with frequent opups from Y to J on crowded flights.
The one and only time I've been in F on EK the service was very good but not quite as good as the (very few) times in F with other carriers.
