UA really to look at UAEX and fix it. I had all sorts of issues with UAEX even the no alcohol problem.
They didn't come and offer snack boxes for sale? Your claim of "no food service" seems to suggest it, but I've never not been offered a snackbox for sale on the longer ERJ flights. If no snack box sales, that is pretty bad. If nothing other than snack boxes, this is SOP for UAX and isn't a recent change, and as a 1K, this shouldn't really be a surprise. If you wanted a meal flight, should have booked a mainline.

But I do agree, they should probably change the food service on the longer ERJ segments and at least offer some of the non-warmed options for sale in Y, and a cold plate in F.

As to the actual thread topic, I've never been on a UAX where they were dry - they always have had alcohol when I've asked (though I admit - I don't drink too much on UAX flights since they are usually ~1 hour or less flights for me). I know they won't do alcoholic PDB ex-Canada because of local laws, and I've seen them run out at times, but never not have any.

I doubt they've changed to not have alcohol on UAX flights either - if UAX was all short flights, I could see it happening, but with the longer lengths of some and the ability to make $ off of it, something I can't imagine they'd take out. My guess is either you had bad luck with flights being mis-catered (or possibly ran out when returning from the outstation), or potentially a carrier-specific licensing issue that needs to be resolved (i.e. license didn't get renewed on time for whatever reason).
