I have no idea how their system's interpreting the dates. It's almost like it gets it right on the arrival (11/3), but it treats an input of 11/2 as 11/3 because the flight leaves at 150a.
Any ideas?

This is correct. I just did a dummy booking for this, and you would need to have 11/2 as both your outbound and return dates. Once you do this, click on the seat maps for the PHX-ANC and ANC-PHX flights. You'll see the PHX-ANC flight on 11/2 have a message that says "flight arrives on Sunday, 11/3" and on the return leg, the ANC-PHX flight on "11/2" will have a message that says "Flight departs on Sunday 11/3."
When I flew PHX-ANC a couple years ago, I actually took screenshots of the seatmaps I was seeing, printed them out and compared them, to actually make sure I was looking at the correct flights. I did this again after I booked, to ensure I booked what I thought!
