I'd go for the Metropole over the Park Hyatt.

Hoi An is quaint but a total tourist trip. Might be nice at 6 am.

Amanoi over Nam Hai... no question.

Boat trips to the islands are nice at Phulay Bay, but Trisara and Amanpuri are much nicer resorts.
