Ultimately I think your food tour will probably get you what you're looking for. I can never figure out how Thai people can eat such crazy hot food. But I might just have a low tolerance.
I've seen those in a few places so perhaps I should better utilize them. I don't normally add things to food I order but maybe I should start there.
