I'm planning a Hokutosei trip sometime soon. I rode the Hokuriku to Kanazawa (before it got cancelled in 2010), but it's rather short compared to the Sapporo routes.
(BTW, don't forget the Akebono and Nihonkai trains to Aomori!)
The Nihonkai train is no longer a year round train. Just run at some busy season times, which likely means hard to get tickets.
I took it a few weeks before it was discontinued. Hate to admit it, but it was a rather brutal train trip (all I could get is a top berth and the train was delayed en route for about 5 hours)
