I just received my first hotel confirmation that explicitely stated that the hotel would only accept cards with chip and pin. It was from a B&B Hotel along the highway to southern France.

These cases are still rare, so I think in most cases you will be able to use your preferred card. Nevertheless, I would recommend bringing your chip and pin card as backup.
