An interesting aspect of the welcome BS response. Most of the decent dining establishments I frequent (and indeed some lesser ones) have highly proactive managers/supervisors. That requires keeping the eyes on the numerous balls all the time ... from the availability of clean glassware/cutlery to food temperatures and stock levels and cleanliness. Constant vigilance and floor-walking, not chatting or loitering, is essential.
