I've never had that happen with my UK Amex or any other UK issued EMV card for that matter. Most terminals around the world just recognise where the card is from and show the prompts in English. I could understand Spanish in the US though as there are obviously Spanish speakers, but I do not understand why you'd have French. I can only imagine that Amex didn't put the language code on the chip.
Perhaps with a sense of foreign visitors being the ones with emv chips. Almost all ATM's I do business wih in the USA as the first screen ask for a choice of language. Lots of visitors to the USA parle le francais. Il y a beaucoup de quebecois pres de la frontier avec Quebec, oui.
