Why not update to new 7.0? I'm not a tech SME so maybe there is an issue I don' t know about.
Certain apps may not have been updated yet to work with 7.0, so they may not be fully functional (the app to read my work emails has altered us with respect to not being ready yet). There may also be other bugs/glitches in the new system that come to light with the increased number of users. I'm holding off updating the phone, where I do need to be certain I can get work emails, but am going to do the iPad when I get home tonight.
