I got the impression you are familiar with HK, but in case I am wrong the Peninsula and/or the Mandarin will be a great option to discover the city given what they meant to HK hospitality history.
As you are thinking to use a car service, maybe the legendary green RR fleet of Peninsula might make a difference in your selection
