The molecular structure of beef and lamb are very different, so it's not as easy to wreck it through over cooking. With mutton it is virtually impossible! Good quality mutton can taste fantastic, quite a revelation. My retirement project is to get BA to put my mutton in First!
I'll take my mutton in the form of a scotch pie. With chips and baked beans of course. Cheap, cheerful, and goes perfectly with the copious amounts of booze typically consumed on a flight. The resulting gas issue I shall overlook....
