As a sheep farmer it annoys me that airlines don't make more use of lamb and mutton in their dishes, but there are cultural sensitivities there (many Europeans won't touch it, some Germans and Nordics find the smell quite off putting), just as there are with pork. And a big percentage of people won't touch fish, though I think fish pie works really well. Beef is "safe" for everywhere outside India and a few parts of South Asia, but it is a poor option as airline food.
I'm not a sheep farmer, but some of the best meals I've had in the air have been some sort of lamb cut with root vegetables and potatoes. I think mutton might get more resistance from a broader populace, but lamb? (I always say more for me then..

)
