You will go thru passport control in CDG on both the outbound and the return. This can go quickly or take a while, depending many things, including how many flight arrive at the same time as yours and the state of labor relations in France. Customs in Europe is mainly a formality -- you go thru a door that says "nothing to declare" or one that says "items to declare" at your final destination (i.e. DUB) You can be stopped and inspected but that is rare. Passport control is what takes time.
That actually isn't the case, because Ireland is not in Schengen.
