To be fair, it's not really the job of Duty Free employees to enforce customs. They should tell you what the allowance is, but if you insist on buying more it's not their problem.
After all, you could be buying for somebody else in the terminal. Conversely, you could buy 3 times the allowance on 3 separate boarding passes and then take everything yourself, so enforcement at the DF shop wouldn't work anyway.
