You will be listed for upgrade if you are MVP at the time of booking. As long as the ticket is not reissued after you drop down to regular member, you will remain on the waitlist and continue to be eligible for an upgrade. Note that reissues can happen for reasons out of your control (like schedule changes). If your ticket is reissued at a time where you do not have status, you will lose your upgrade or waitlist, and will not be eligible for a complimentary upgrade unless you re-attain status prior to the flight.

Other benefits like bags work the same way. The only thing that matter is your status the last time the ticket is reissued. Assuming no reissues, you can enjoy the benefits of your status even if it expires prior to your flight.
