Hotels - Unless you booked a non-refundable rate then it will be easy to cancel.

Cars - Easiest to cancel--unless you booked a non-refundable rate to save a few $.

Planes - Booked with miles? Will be able to re-deposit but will cost $. Find a good agent to waive it re:cruise cancelation.
