it's odd nobody mentioned these hotels : I never stayed at the properties, but it seems they are the only ones even trying to be luxurious , "Cramim" near jerusalem and "Bereeshit" in Mitzpe Ramon by Isrotel (and maybe the other "luxury collection" hotels by this hotel chain)
I have heard positive feedback regarding Bereeshit by Isrotel, but havenīt stayed there myself yet.
I guess the reasons why they arenīt mentioned are:
1) they arenīt associated with any major (US) hotel chain
2) they are comparably small
3) most people stay in Tel Aviv and Jerusalem (any maybe Haifa and Eilat and a few other places, but rarely outside the larger cities)
