Are you sure you only used 30k M&M miles for the upgrade since the upgrade chart suggests one way Economy to Business upgrades would cost 35k or 50k miles. I think they will simply refund the miles and you will have to ask for an upgrade again since upgrade awards may not be available on the new flight.

Lastly, can I change my ticket from LH to LX through Amex for that same $300 change fee, or is that change fee only for changing to another LH flight?

I would just call Amex and ask, but this ticket was booked by someone else for me by their Centurion team based in the UK.
