Except the OP has 2.5 hours. Let's say it takes 20 minutes each way to get there and back, 10 minutes to get back through security, and you want to be at the gate 40 minutes before the flight. That's still an hour to enjoy at In-N-Out, which is plenty of time, even for how busy it can be on a Saturday night.
