I have a habit of watching my luggage, if not in the overhead compartment, at all stops during most train journeys in Europe. May sound paranoid, but has kept my belongings safe so far.
We do the same, though if we're moving about a lot by train, I take a bicycle lock with us and lock our luggage to something immovable.
