Check with original carrier about checking bags all the way through, if not just keep them and follow the below...
Take the MTR into HK Station. Take taxi to Conrad... go explore LKF or Wan Chai... or both.
The next morning do the same in reverse. You'll be able to check your bag at the HK MTR station.
If Malaysia Air can't check your bags all the way through then don't mess around trying to recheck your bag on CX when you get there cause it will just waste your time to enjoy the nightlife.
I have done the above in HK many times and I will probably do it again next month with the only exception being that I'll probably stay at the Renaissance this time.
If you are flying business, and don't really care how you'll feel the next day, then don't hesitate to just stay up all night and go to the airport in the morning. Heck, I've even done it when flying in econ and lived to tell about it.
OP already at the airport, OP staying <24 hours. checkin for CX is perfectly ok. why not check it in whilst in the airport (which only involves going up 1 floor) instead of lugging everything to Conrad - you never know what happens the next day
