As others have said, the Air Canada website should be clear on who operates what. It should say "operated by Lufthansa" or something like that if it's an AC codeshare.

Now, here is the tricky part. Mileage earning in *A is always governed by the fare code on the metal on which you fly. As Stranger mentions, the fare code listed on your AC itinerary might map to a different fare on Lufthansa. To be sure after booking, you can obtain the Lufthansa PNR from AC and check on their website as to what fare code you're booked into. With this code you can look at the AC earning page for LH and see what it earns.

It's complicated, I know. You might be able to credit intra-European flights to UA, but the cheapest fare codes there don't earn miles either.
