First, the primary result of having too many people on the system would be that you couldn't get an IP address (DHCP overload). We aren't seeing that. We are seeing a lack of bandwidth. Even if you got rid of everyone hanging around outside, that bandwidth would be soaked up by people in the club and you still wouldn't have enough.
Historically there were also issues with hardware overload on the routers not due to bandwidth of the up-stream connection but due to the volume or types of requests happening against the routers on the access points. If the access points are overloaded by connections that can be an issue, too, even if they aren't using much bandwidth.
