Benlee, you yourself say what is wrong with The Mulia in your tripadvisor report. It is not Balinese in style and it is HUGE (750 rooms on opening, rising to 1,000). This despoils Bali's culture, and having seen it, there is no way I would think of comparing it to one of the Amans, where buffets never figure in the culture.
Yes, the Mulia is a large resort, but one can personalize the stay and choose the upper tier Mulia suites and Villas and get the same feel of staying at a intimate boutique resort. And when I say close to Amans, it is refer to the service which I find excellent. As for the food, good food is good food regardless how it is presented. Buffet food when done well can taste great. Ala carte food when cooked poorly can also taste awful. The Mulia being a larger resort just encompasses more choice to include buffet style. In fact, the breakfast I had at the lounge, it is similar to the Aman serving style in that I can order anything I want from the menu and it is prepared separately. Not buffet. In fact, I find the food quality at breakfast at the Mulia to be superior to the other Aman bali resort I have stayed in, ie Amankila.
Given that the resort has just opened for 6 months, I find the level of service and quality the Mulia has delivered during my stay to be very impressive. Granted, it is not perfect, hence it did not get the 5/5 rating. Still some flaws here and there.
