Seat charts are not at all reliable.

Adding a flight on the spur of the moment is not realistic in many cases, you have to have gate space, you have to have a plane, etc. They may swap the plane for a bigger one, but that's probably not going to happen either.

Number of open seats, be it real seats or on the seating chart, really doesn't mean prices will drop either.
