On that part of the boarding pass the "M" just represents any economy ticket, regardless of booking class. Once you are at the airport and boarding your flight the booking class becomes irrelevant and only the class of service is relevant.

Further upthread people were discussing/speculating why M is the letter that was chosen to represent Economy.
