i was making reference to the marble grading scale of 1-12 versus the yield/quality....i took it as a given it was the highest yield/qualty but even at A5, there is a different between A5 No.10 and A5 No. 8...
either way, the stuff i have gotten from costo has pushed into the upper marble ranges. i think technically in Canada, they have prime and do not really get into the marble range but stores here seem to have adopted the japanese system using technically prime but then delinating the marble grading.

it is afterall still only waygu....but IMO, fat is fat. kobe is not hida either...and hida is supposed to be the best...but honestly, again, fatty beef is fatty beef and it is ALL GOOD...
