Finding Best Routing

So I currently have a points ticket from YYZ-CPT. As of right now, the connections are not super great and I'm trying to find something that could possibly be better. What I have right now is as follows:

Outbound:
Dec 8, TK018, YYZ-IST, depart -22:55, arrive -15:50 +1
Dec 10, TK040, IST-CPT, depart - 00:55, arrive - 14:05

Return:
Jan 22, SA336 CPT-JNB, depart - 14:10, arrive - 16:10
Jan 22, SA203 JNB-JFK, depart - 20:30, arrive - 06:05 +1
Jan 23, AC8903 JFK-YYZ, depart - 10:45, arrive - 12:30

All of these would be in economy, outbound dates can change a bit but the return has to be after Jan 22.

I'm more wanting to change the outbound flight since I don't want to get a visa in Istanbul and I would have to pay to access a lounge since I don't have status. I have looked into ADD, but again I would need a visa and hotel there (though I would be on a 787). I have also looked into South American routes but those take way longer and nothing has opened up. I also don't want to pay any scamcharges, so that eliminates a fair chunk of Europe.

I have also looked at YYZ-IAD-DKR-JNB-CPT, but I did that flight last year and wasn't super impressed about landing in DKR. Also clearing customs at JNB is a pain compared to CPT, so finding a flight that doesn't disembark at JNB would be awesome.

With regards to the return, I am just looking for closer connecting flights which also have not opened up. I have looked on ANA and the UA website.

Are there any routings I have missed or not though of? Is EA's offering better than TK's?

EDIT: Forgot to mention, CAI could also work since EA, has a direct flight from YYZ but getting a flight to CPT is hard, best I've found is CAI-EBB-JNB-CPT.
