Well, I consider it good luck that the Westin didn't open as it forced us to stay in a Villa, out in the rice fields, only walkable. The back pathways are really the unique beauty of Ubud. Look around VRBO.com for some pics and pricing.
That said, FWIW, our driver said that the Westin hotel was 25% finished and kinda laughed when I asked about a December opening. I didn't look, however, so maybe December is still on.
