One can change certain passport information online as well as the mail to address. As for the second, having gone Friday to Otay Mesa SENTRI to update my DL expiry date, I had to produce my new DL and my GE card. My fingers were not printed.
The expressed reason for physical presence was articulated based on the CBP access to their database which includes passports and the inability to access state level or other databases to confirm other documentary status changes.
The legal update requirement speaks to address, passport, drivers license with regards to expiry dates and references "documents" used to establish your
account. Though employment data are included in your profile, it is unclear how or if these data need to be kept current. I used pay stubs and bank account statements to establish my eligibility but have never updated those.
As for the OP, you have the privilege of an in person visit because of the change in DL. Please let us know if and how employment updates were managed or requested.
