Actually the 'high end' bars i have worked in are not establishments often frequented by poseurs or celebrants. The poseurs who do come in however are usually quaffing Champagne. Mostly choosing a brand name over quality. Self important types love Champagne but i guess you know that already, right?
I think 9 years making drinks, working in bars and doing huge amounts of qualifications in tasting and making alcoholic drinks is very relevant to the 'debate'.
