Can I join at a later stop than booked?

I am looking at a trip travelling around the SW USA later in the year.

I am not sure yet whether I will be heading as far as LA or stopping at Palm Springs.

If I book a seat on the Sunset Limited from LA to San Antonio, do I have to get on the train at LA or lose my seat and booking, or can I board at Palm Springs 2 1/2 hours later with my ticket from LA?
