Correct. You can only use your upgrade credits on AC operated flights. In theory you could use miles to upgrade on SA, but that would require purchasing a B or Y fare which will be ridiculouzsly expensive.

And yes, if you want to upgrade the TATL segment, your options basically are YYZ-LHR/FRA/ZRH-JNB with YYZ-LHR probably being the easiest option for upgrades.
