She is supposed to attend a wedding with me tomorrow.Now she's not the savviest when it comes to asking for things, but doesn't this seem a little ridiculous? A straight refund? I feel like at the very least Delta or American would have offered a pretty sizable voucher for the troubles, and put her on another airline if they had to.

I think we are missing WAY too much information to help. Are you sure the flight wasn't canceled? LOTS of cancelations along the eastern seaboard due to lots of bad weather. And if that is the case she needs to get rebooked but no compensation for weather related cancelations. Sorry. And if rebooking makes her to late to get to the wedding she can probably cancel and get a full refund for trip in vain.
