American credit cards are certainly accepted almost everywhere in Europe. The issue with chip and pin I believe is that many ticket booths (trains, metro systems and some ATM's) only accept cards with chip and pin. I've got a BA Visa which is a chip and pin card so didn't have any trouble on our last trip - it seems some of the more popular cards for travel are coming out with chip and pin cards so you might look into them before your next trip!
