I've had luck doing similar in AMS, though it was 5 or so years ago. I had a Schengen-Schengen connection. Wanted to check out the food offerings on the non-Schengen side. Was just told to give myself enough time to pass back through and was stamped in both directions.

At smaller airports it might be more trouble. Recently at HEL I wanted to try to use one of my two free Lounge Club visits to access the Finnair Lounge (and more importantly, finally get a HEL stamp in my passport.) Was told I couldn't, but will try again next time, as it should be no problem with the layout to re-enter Schengen area as long as I time it with arriving flights so the station is sure to be manned.
