What I meant by that is that if I call to confirm at 36 hours, when my meal still isn't loaded, the flight crew claims 36 hours was "too early."

Well aware of that. It's on longhaul flights where I run into the issue. I have had them fail to load my Japanese meal three times in the past 12 months on flights to/from NRT. I managed to still get it once after really laying it on thick with the FA about how a 1K on a B fare ought to have some priority as they'd taken orders front-to-back, of all things, and claimed they'd already run out because "it's a high demand meal" (it is, but I'd pre-ordered mine!). I also had them lose a couple of other meal requests for me in that timeframe, and they missed my wife's Asian vegetarian meal two times in that period.

Call. The phone agent should be able to at least let you know if a meal request shows up on the res--it can fall off with schedule changes, including "stealth" ones which don't ever show up as a change on the web site. You should call within about 2 days of your flight--inside 24, they can't do it if it's messed up, and more than 48 hours out and you run the risk of another change wiping it out before you fly.
The phone agent can also remove a request.
