I have to disagree with yyzsd, what may be guidlines is not practice. I have seen fa's make a greater effort in customer service on the ny routes (no doubt due to competition, and premium fares being paid). I have also seen quite a few airsmiles being requested, including by myself!
Always been served free booze when asked? (non-delay related) Cheers! (sincerely) Just telling you what the guidelines are. Every airline for commercial reasons sets their own policy, and there is probably no more competitive International route than New York/London. BA/VS offer free complementary bar, AA offers only free beer and wine, UA charges for everything as far as I know. As far as offering headsets versus booze (officially) well over a year ago - Customers who couldn't take advantage of a drink due to age, religious reasons, or other considerations were very instrumental in deciding that headsets were preferred, especially as 99.5% of the fleet had PTV's to help pass the time during a delay.
